Coconut Flour Chocolate Chip Cookies

These are really good. They’re small, but just the perfect treat. Sometimes almond flour doesn’t agree with me, so I’ve learned to swap it out with coconut flour in my recipes. Honestly, I think coconut flour is lighter and fluffier. This is a simple recipe of 2 eggs 🥚, Bob’s Redmill coconut flour, baking soda, vanilla, pure maple syrup, coconut oil, and Enjoy Life Mega chocolate chunks!! 😊 so good.

Ingredients:
½ cup Coconut flour, I used Bob’s Redmill
½ teaspoon baking soda
¼ teaspoon sea salt
2 eggs
1/3 cup coconut oil
1/3 cup pure maple syrup
2 teaspoon pure vanilla extract
Instructions:
1. Preheat oven to 350 F.
2. Grease a nonstick cookie sheet.
3. Whisk the eggs, coconut oil, vanilla, and maple syrup in a large missing bowl.
4. In a smaller bowl blend the coconut flour, baking soda, and sea salt.
5. Add the dry ingredients to the wet ingredients and mix until combined. It will start out runny and then thicken up.
6. Drop a tablespoon full of the mixture onto the cookie sheet. I made 10 cookies.
7. Once you’ve dropped all of the dough onto the cookie sheet, take three individual Enjoy Life Mega Chunks and nestle each chunk into the dough. Use three per each cookie.
8. Place in oven for 10 minutes. I check mine around 8 minutes. Some ovens cook hotter than others.
9. When cooking is complete, take out of oven and let cool.
