Rice & Spinach
Jan 24, 2022White rice can get a bad wrap sometimes. While it's a great activity carb, it's best when paired with a protein (meat, fish, chicken, etc.) and a fat. Paring a higher glycemic food with a fat and/or protein slows down the absorption into your blood stream thus helping to prevent a quick spike in blood sugar. Here's a quick side for any meal!
Tip: I add nutritional yeast in place of parmesan for myself!
Ingredients
- 1 cup Instant Jasmine Rice
- 2 tbsp olive oil
- 4 tbsp butter
- 3 cloves garlic, minced
- 4 cups packed fresh spinach
- 2 tsp lemon juice
- 2 tablespoons parmesan cheese
Instructions
- Prepare rice according to package directions.
- Meanwhile, heat oil and butter in medium saucepan set over medium heat; cook garlic for 1 min.
- Add rice to saucepan and coat with butter and oil.
- Stir spinach into rice mixture.
- Lastly, stir in lemon juice and parmesan cheese.
- Serve with your favorite protein!
